Quick & Easy Midnight Fried Rice

Ingredients:

  • 2 cups Long Grain Rice
  • 2 tablespoons Vegetable Oil
  • 2 cloves Garlic
  • 1 cup Mixed Frozen Vegetables
  • 2 Eggs
  • 3 tablespoons Low Sodium Soy Sauce
  • 1 teaspoon Sesame Oil
  • 2 stalks Spring Onion

Instructions:

  1. Cook the rice according to package instructions and let it cool.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the garlic, and cook until fragrant.
  4. Add the mixed vegetables and cook until heated through.
  5. Push the vegetables to one side of the skillet and crack the eggs on the other side. Scramble the eggs and mix with the vegetables.
  6. Add the rice, soy sauce, and sesame oil to the skillet. Toss everything together and cook for another 2-3 minutes.
  7. Garnish with the chopped spring onions and serve hot.
