
Quick & Easy Midnight Fried Rice

Ingredients:
- 2 cups Long Grain Rice
- 2 tablespoons Vegetable Oil
- 2 cloves Garlic
- 1 cup Mixed Frozen Vegetables
- 2 Eggs
- 3 tablespoons Low Sodium Soy Sauce
- 1 teaspoon Sesame Oil
- 2 stalks Spring Onion
Instructions:
- Cook the rice according to package instructions and let it cool.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the garlic, and cook until fragrant.
- Add the mixed vegetables and cook until heated through.
- Push the vegetables to one side of the skillet and crack the eggs on the other side. Scramble the eggs and mix with the vegetables.
- Add the rice, soy sauce, and sesame oil to the skillet. Toss everything together and cook for another 2-3 minutes.
- Garnish with the chopped spring onions and serve hot.
