Quick & Easy Mexican Shrimp Tacos

Ingredients:

  • 1 pound shrimp
  • 2 tablespoons olive oil
  • 1 packet taco seasoning
  • 2 diced garlic cloves
  • 4 pieces tortillas
  • 1 sliced avocado
  • 2 chopped tomatoes
  • 1 head, shredded lettuce
  • 2 tablespoons sour cream
  • 1 wedges lime

Instructions:

  1. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat and sauté the diced garlic for a minute until fragrant.
  2. Add the shrimp and taco seasoning to the skillet. Stir well to coat the shrimp with the seasoning. Cook the shrimp for about 4 to 5 minutes, until they turn pink.
  3. Heat the tortillas in a dry skillet or microwave until warm.
  4. To assemble the tacos, spread a tablespoon of sour cream on each tortilla. Add some lettuce, followed by the cooked shrimp.
  5. Top with chopped tomatoes, sliced avocado, and a squeeze of lime juice. Fold the tortilla over and enjoy!
