
Quick & Easy Mexican Shrimp Tacos

Ingredients:
- 1 pound shrimp
- 2 tablespoons olive oil
- 1 packet taco seasoning
- 2 diced garlic cloves
- 4 pieces tortillas
- 1 sliced avocado
- 2 chopped tomatoes
- 1 head, shredded lettuce
- 2 tablespoons sour cream
- 1 wedges lime
Instructions:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat and sauté the diced garlic for a minute until fragrant.
- Add the shrimp and taco seasoning to the skillet. Stir well to coat the shrimp with the seasoning. Cook the shrimp for about 4 to 5 minutes, until they turn pink.
- Heat the tortillas in a dry skillet or microwave until warm.
- To assemble the tacos, spread a tablespoon of sour cream on each tortilla. Add some lettuce, followed by the cooked shrimp.
- Top with chopped tomatoes, sliced avocado, and a squeeze of lime juice. Fold the tortilla over and enjoy!
