
Quick & Easy Mexican Shrimp Breakfast Tacos

Ingredients:
- 500 grams large, raw and peeled shrimp
- 8 quantity tacos
- 2 tablespoons olive oil
- 3 cloves garlic cloves
- 1 quantity red bell pepper
- 1 quantity green bell pepper
- 1 quantity onion
- 1 can black beans
- 8 eggs scrambled eggs
- 1 cup Mexican cheese blend
- to taste cilantro
- to use lime wedges
- 1 quantity avocado
- to serve salsa
Instructions:
- Heat the olive oil in a large skillet over medium-high heat. Add garlic and cook until fragrant (about 1 minute).
- Add in shrimp and cook until pink. Remove from skillet and set aside.
- In the same skillet, add the diced bell peppers and onion. Cook until they are soft and the onions are translucent.
- Drain the can of black beans and add to the skillet. Let everything cook together for a couple of minutes.
- Add the cooked shrimp back into the skillet and stir everything together. Remove from heat.
- In a separate skillet, scramble the eggs. Once cooked, add them to the skillet with the shrimp and the vegetables.
- Warm up the tacos according to the package instructions.
- Fill each taco with the shrimp and egg mixture. Top with grated cheese, fresh cilantro, lime juice from the lime wedges, sliced avocado and salsa.
