Quick & Easy Mexican Shrimp Breakfast Tacos

Ingredients:

  • 500 grams large, raw and peeled shrimp
  • 8 quantity tacos
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves
  • 1 quantity red bell pepper
  • 1 quantity green bell pepper
  • 1 quantity onion
  • 1 can black beans
  • 8 eggs scrambled eggs
  • 1 cup Mexican cheese blend
  • to taste cilantro
  • to use lime wedges
  • 1 quantity avocado
  • to serve salsa

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add garlic and cook until fragrant (about 1 minute).
  2. Add in shrimp and cook until pink. Remove from skillet and set aside.
  3. In the same skillet, add the diced bell peppers and onion. Cook until they are soft and the onions are translucent.
  4. Drain the can of black beans and add to the skillet. Let everything cook together for a couple of minutes.
  5. Add the cooked shrimp back into the skillet and stir everything together. Remove from heat.
  6. In a separate skillet, scramble the eggs. Once cooked, add them to the skillet with the shrimp and the vegetables.
  7. Warm up the tacos according to the package instructions.
  8. Fill each taco with the shrimp and egg mixture. Top with grated cheese, fresh cilantro, lime juice from the lime wedges, sliced avocado and salsa.
