
Quick & Easy Mexican Scrambled Eggs

Ingredients:
- 8 units Eggs
- 2 tablespoons Butter
- 1 unit Onion
- 2 units Tomato
- 1 unit Jalapeno pepper
- 1 cup Cheddar Cheese
- 8 units Tortillas
- handful Coriander leaves
- to taste Salt and pepper
Instructions:
- Crack the eggs into a bowl and lightly whisk until the yolks and whites are fully combined. Season with salt and pepper.
- Finely chop the onion, tomato, and jalapeno pepper. Remove the seeds from the pepper if you prefer less heat.
- Melt the butter in a non-stick frying pan over medium heat. Add the onion and jalapeno and sauté until the onion is translucent.
- Add the tomato to the frying pan and cook for a further 2 minutes, until they begin to soften.
- Pour the eggs into the frying pan with the onion, tomato, and jalapeno. Cook, stirring gently, until the eggs are softly set.
- Sprinkle the cheese over the eggs and let it melt into the mixture.
- Warm the tortillas in the oven or on a griddle. Then spoon the scrambled eggs onto the center of each tortilla.
- Roll up the tortillas, garnish with coriander leaves, and serve your quick & easy Mexican scrambled eggs immediately.
