Quick & Easy Mexican Quesadillas

Ingredients:

  • 2 pieces Large Flour Tortillas
  • 1 cup Shredded Mexican Blend Cheese
  • 1 cup Can Black Beans, drained and rinsed
  • 2 stalks Green Onion
  • 1 tablespoon Olive Oil

Instructions:

  1. Chop the green onions into thin slices.
  2. Spread olive oil lightly on one side of each tortilla, then flip them over.
  3. On one half of each tortilla, evenly distribute the cheese, black beans, and green onions.
  4. Fold the tortilla in half to cover the ingredients.
  5. Heat a skillet over medium heat, then place the quesadilla in the skillet. Cook for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted.
  6. Remove from the skillet, cut into wedges, and serve hot. Enjoy your quick and easy Mexican Quesadillas!
