
Quick & Easy Mexican Pasta Snack

Ingredients:
- 250 grams Pasta
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 teaspoon Red Chili Flakes
- 1 can Canned Black Beans
- 1 can Canned Corn
- 2 medium-size Tomatoes
- 1 medium-size Avocado
- 1 cup Grated Cheddar Cheese
- to taste Salt and Pepper
Instructions:
- Boil the pasta according to the package instructions until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the finely chopped garlic and red chili flakes, cook for about 1-2 minutes until garlic is slightly golden.
- Add the drained black beans and corn to the pan, cook for another 3-4 minutes until heated through.
- Chop the tomatoes and the avocado into small cubes. Add them to the pan, stirring gently to combine.
- Add the cooked pasta to the pan, mixing well so that the ingredients are evenly distributed.
- Season with salt and pepper, then top with the grated cheddar cheese. Cover the pan with a lid for a couple of minutes until the cheese is melted.
