Quick & Easy Mexican Pasta Snack

Ingredients:

  • 250 grams Pasta
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 teaspoon Red Chili Flakes
  • 1 can Canned Black Beans
  • 1 can Canned Corn
  • 2 medium-size Tomatoes
  • 1 medium-size Avocado
  • 1 cup Grated Cheddar Cheese
  • to taste Salt and Pepper

Instructions:

  1. Boil the pasta according to the package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the finely chopped garlic and red chili flakes, cook for about 1-2 minutes until garlic is slightly golden.
  3. Add the drained black beans and corn to the pan, cook for another 3-4 minutes until heated through.
  4. Chop the tomatoes and the avocado into small cubes. Add them to the pan, stirring gently to combine.
  5. Add the cooked pasta to the pan, mixing well so that the ingredients are evenly distributed.
  6. Season with salt and pepper, then top with the grated cheddar cheese. Cover the pan with a lid for a couple of minutes until the cheese is melted.
  7. Serve hot, and enjoy your quick & easy Mexican pasta snack!
