Quick & Easy Mexican Pasta

Ingredients:

  • 8 oz Pasta
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 1 Red bell pepper
  • 1 can Diced tomatoes
  • 1 can Black beans
  • 1 cup Sweet corn
  • 1 cup Mexican blend cheese
  • 2 tbsp Taco seasoning
  • to taste Salt and pepper

Instructions:

  1. Cook the pasta according to the package instructions. Once done, drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and red bell pepper, sautéing until soft.
  3. Add diced tomatoes, black beans, sweet corn, and taco seasoning to the skillet. Stir to combine and let simmer for a few minutes until heated through.
  4. Add the pasta to the skillet and stir until combined and coated with the sauce. Season with salt and pepper to taste.
  5. Top the pasta with cheese and let it melt. Serve hot.
