
Quick & Easy Mexican Pasta

Ingredients:
- 8 oz Pasta
- 2 tbsp Olive oil
- 2 cloves Garlic
- 1 Red bell pepper
- 1 can Diced tomatoes
- 1 can Black beans
- 1 cup Sweet corn
- 1 cup Mexican blend cheese
- 2 tbsp Taco seasoning
- to taste Salt and pepper
Instructions:
- Cook the pasta according to the package instructions. Once done, drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and red bell pepper, sautéing until soft.
- Add diced tomatoes, black beans, sweet corn, and taco seasoning to the skillet. Stir to combine and let simmer for a few minutes until heated through.
- Add the pasta to the skillet and stir until combined and coated with the sauce. Season with salt and pepper to taste.
- Top the pasta with cheese and let it melt. Serve hot.
