
Quick & Easy Mexican Fried Rice

Ingredients:
- 2 cups Rice
- 2 Tablespoons Vegetable oil
- 2 cloves Garlic
- 1 medium-sized, chopped Onion
- 1 finely chopped Bell pepper
- 1 cup Frozen corn
- 1 cup, drained and rinsed Canned Black beans
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 2 medium-sized, chopped Tomatoes
- To taste Salt
Instructions:
- In a large skillet, heat the vegetable oil over medium heat.
- Add the garlic, onion, and bell pepper, cook until softened and beginning to brown, about 5 minutes.
- Add the rice to the skillet and cook for 2-3 minutes, until the rice is lightly toasted.
- Stir in the cumin and chili powder.
- Add the tomatoes, corn, and black beans. Stir well to combine.
- Lower the heat, cover the skillet, and let simmer for 20 minutes until the rice is cooked and the flavors are combined.
- Season with salt to taste and serve hot.
