Quick & Easy Mexican Fried Rice

Ingredients:

  • 2 cups Rice
  • 2 Tablespoons Vegetable oil
  • 2 cloves Garlic
  • 1 medium-sized, chopped Onion
  • 1 finely chopped Bell pepper
  • 1 cup Frozen corn
  • 1 cup, drained and rinsed Canned Black beans
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 2 medium-sized, chopped Tomatoes
  • To taste Salt

Instructions:

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the garlic, onion, and bell pepper, cook until softened and beginning to brown, about 5 minutes.
  3. Add the rice to the skillet and cook for 2-3 minutes, until the rice is lightly toasted.
  4. Stir in the cumin and chili powder.
  5. Add the tomatoes, corn, and black beans. Stir well to combine.
  6. Lower the heat, cover the skillet, and let simmer for 20 minutes until the rice is cooked and the flavors are combined.
  7. Season with salt to taste and serve hot.
