
Quick & Easy Mexican Egg Tacos

Ingredients:
- 8 units Eggs
- 8 units Soft taco shells
- 1 unit Avocado
- to taste Salsa
- 1 cup Cheddar Cheese
- 1 tbsp Olive oil
- to taste Salt
- to taste Pepper
Instructions:
- 1. In a large non-stick pan, heat the olive oil over medium heat.
- 2. Crack the eggs into a bowl, add salt and pepper to taste, and beat until blended.
- 3. Pour the egg mixture into the pan and scramble until fully cooked.
- 4. Warm up the tacos shells as per the package instructions. Cut the avocado into slices.
- 5. Assemble your tacos: place scrambled eggs on a taco shell, top with salsa, cheddar cheese, and avocado slices.
- 6. Repeat with remaining ingredients and serve while hot.
