Quick & Easy Mexican Egg Tacos

Ingredients:

  • 8 units Eggs
  • 8 units Soft taco shells
  • 1 unit Avocado
  • to taste Salsa
  • 1 cup Cheddar Cheese
  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Pepper

Instructions:

  1. 1. In a large non-stick pan, heat the olive oil over medium heat.
  2. 2. Crack the eggs into a bowl, add salt and pepper to taste, and beat until blended.
  3. 3. Pour the egg mixture into the pan and scramble until fully cooked.
  4. 4. Warm up the tacos shells as per the package instructions. Cut the avocado into slices.
  5. 5. Assemble your tacos: place scrambled eggs on a taco shell, top with salsa, cheddar cheese, and avocado slices.
  6. 6. Repeat with remaining ingredients and serve while hot.
