
Quick & Easy Mexican Egg Dinner

Ingredients:
- 8 whole Eggs
- 2 tablespoons Olive oil
- 1 whole Onion
- 1 whole Bell pepper
- 1 can Black beans
- 1 cup Cheddar cheese
- 0.5 cup Salsa
- to taste Chopped cilantro
- 1 whole Avocado
- 4 whole Tortillas
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add diced onion and bell pepper and cook until softened, about 5 minutes.
- Drain and rinse the black beans, then add to the skillet. Cook until heated through.
- In a separate bowl, beat the eggs. Add them to the skillet and stir, cooking until the eggs are scrambled and fully cooked.
- Sprinkle the cheese over the top of the egg mixture and cover the skillet. Allow the cheese to melt.
- Warm the tortillas in a dry skillet over low heat.
- Spoon the egg mixture onto each tortilla and top with salsa, cilantro, and slices of avocado. Roll up the tortillas and serve.
