Quick & Easy Mexican Egg Dinner

Ingredients:

  • 8 whole Eggs
  • 2 tablespoons Olive oil
  • 1 whole Onion
  • 1 whole Bell pepper
  • 1 can Black beans
  • 1 cup Cheddar cheese
  • 0.5 cup Salsa
  • to taste Chopped cilantro
  • 1 whole Avocado
  • 4 whole Tortillas

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add diced onion and bell pepper and cook until softened, about 5 minutes.
  2. Drain and rinse the black beans, then add to the skillet. Cook until heated through.
  3. In a separate bowl, beat the eggs. Add them to the skillet and stir, cooking until the eggs are scrambled and fully cooked.
  4. Sprinkle the cheese over the top of the egg mixture and cover the skillet. Allow the cheese to melt.
  5. Warm the tortillas in a dry skillet over low heat.
  6. Spoon the egg mixture onto each tortilla and top with salsa, cilantro, and slices of avocado. Roll up the tortillas and serve.
