Quick & Easy Mexican Chicken Breakfast Tacos

Ingredients:

  • 2 pieces boneless, skinless chicken breasts
  • 1 pack taco seasoning mix
  • 2 tablespoons olive oil
  • 4 pieces small corn tortillas
  • 4 pieces scrambled eggs
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 piece avocado, sliced
  • to taste N/A sour cream

Instructions:

  1. 1. Cut the chicken into small pieces and toss them in the taco seasoning.
  2. 2. Heat the olive oil in a pan over medium heat. Add the chicken and cook for 10-12 minutes, until fully cooked.
  3. 3. While the chicken is cooking, scramble the eggs in another pan.
  4. 4. Warm the tortillas in a skillet or microwave.
  5. 5. To assemble the tacos, add a layer of scrambled eggs, followed by the cooked, seasoned chicken on the warm tortilla.
  6. 6. Top with shredded cheese, salsa, sliced avocado, and sour cream to taste.
