
Quick & Easy Mexican Chicken Breakfast Tacos

Ingredients:
- 2 pieces boneless, skinless chicken breasts
- 1 pack taco seasoning mix
- 2 tablespoons olive oil
- 4 pieces small corn tortillas
- 4 pieces scrambled eggs
- 1 cup shredded cheese
- 1 cup salsa
- 1 piece avocado, sliced
- to taste N/A sour cream
Instructions:
- 1. Cut the chicken into small pieces and toss them in the taco seasoning.
- 2. Heat the olive oil in a pan over medium heat. Add the chicken and cook for 10-12 minutes, until fully cooked.
- 3. While the chicken is cooking, scramble the eggs in another pan.
- 4. Warm the tortillas in a skillet or microwave.
- 5. To assemble the tacos, add a layer of scrambled eggs, followed by the cooked, seasoned chicken on the warm tortilla.
- 6. Top with shredded cheese, salsa, sliced avocado, and sour cream to taste.
