Quick & Easy Mexican Beef Breakfast Tacos

Ingredients:

  • 1 lb Ground Beef
  • 8 pcs Small Flour Tortillas
  • 1 can Refried Beans
  • 1 cup Shredded Cheddar Cheese
  • 1 pcs Avocado
  • 4 pcs Eggs
  • To Taste Salt
  • To Taste Pepper
  • To Serve Salsa

Instructions:

  1. In a large skillet, brown the ground beef over medium-high heat. Season with salt and pepper.
  2. In a separate pan, scramble the eggs and season with salt and pepper.
  3. While the beef and eggs are cooking, warm the refried beans in a small saucepan.
  4. Slice the avocado into thin strips.
  5. To assemble the tacos, spread a layer of refried beans on each tortilla. Top with ground beef, scrambled eggs, a sprinkle of cheese, and a few slices of avocado.
  6. Serve hot with your favorite salsa.
