
Quick & Easy Mediterranean Veggie Wrap

Ingredients:
- 1 tbsp Olive oil
- 2 medium Bell peppers
- 1 small Red onion
- 1 medium Zucchini
- 1 large Tomato
- 1/2 cup Feta cheese
- 4 tbsp Tahini sauce
- 2 large Whole wheat wraps
- To taste Salt and pepper
- 1 tsp Dried oregano
Instructions:
- 1. Heat the olive oil in a pan over medium heat.
- 2. Chop the bell peppers, red onion, zucchini, and tomato into thin slices.
- 3. Add the vegetables to the pan and sauté for 10-12 minutes, until tender and slightly caramelized. Season with salt, pepper, and dried oregano.
- 4. Warm the whole wheat wraps in a dry pan over low heat for about a minute on each side.
- 5. Spread 2 tablespoons of tahini sauce onto each wrap.
- 6. Divide the sautéed vegetables between the two wraps and top with crumbled feta cheese.
- 7. Roll up the wraps, tucking in the ends to encase the filling.
