Quick & Easy Mediterranean Veggie Wrap

Ingredients:

  • 1 tbsp Olive oil
  • 2 medium Bell peppers
  • 1 small Red onion
  • 1 medium Zucchini
  • 1 large Tomato
  • 1/2 cup Feta cheese
  • 4 tbsp Tahini sauce
  • 2 large Whole wheat wraps
  • To taste Salt and pepper
  • 1 tsp Dried oregano

Instructions:

  1. 1. Heat the olive oil in a pan over medium heat.
  2. 2. Chop the bell peppers, red onion, zucchini, and tomato into thin slices.
  3. 3. Add the vegetables to the pan and sauté for 10-12 minutes, until tender and slightly caramelized. Season with salt, pepper, and dried oregano.
  4. 4. Warm the whole wheat wraps in a dry pan over low heat for about a minute on each side.
  5. 5. Spread 2 tablespoons of tahini sauce onto each wrap.
  6. 6. Divide the sautéed vegetables between the two wraps and top with crumbled feta cheese.
  7. 7. Roll up the wraps, tucking in the ends to encase the filling.
  8. 8. Serve immediately and enjoy this delicious, quick & easy Mediterranean veggie wrap for your midnight cravings.
