Ingredients:

  • 2 cans Tuna in olive oil, drained
  • 1 cup halved Cherry tomatoes
  • 1 medium-sized, diced Cucumber
  • 1/2 small, finely chopped Red onion
  • 1/2 cup pitted and sliced Kalamata olives
  • 1/2 cup crumbled Feta cheese
  • 1/4 cup chopped Fresh parsley
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. In a large mixing bowl, combine the drained tuna, halved cherry tomatoes, diced cucumber, chopped red onion, sliced olives, crumbled feta, and chopped parsley.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Adjust seasonings to taste.
  3. Drizzle the dressing over the salad, tossing to combine.
