Ingredients:
- 2 cans Tuna in olive oil, drained
- 1 cup halved Cherry tomatoes
- 1 medium-sized, diced Cucumber
- 1/2 small, finely chopped Red onion
- 1/2 cup pitted and sliced Kalamata olives
- 1/2 cup crumbled Feta cheese
- 1/4 cup chopped Fresh parsley
- 2 tablespoons Lemon juice
- 2 tablespoons Olive oil
- to taste Salt
- to taste Black pepper
Instructions:
- In a large mixing bowl, combine the drained tuna, halved cherry tomatoes, diced cucumber, chopped red onion, sliced olives, crumbled feta, and chopped parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Adjust seasonings to taste.
- Drizzle the dressing over the salad, tossing to combine.
