Quick & Easy Mediterranean Seafood Paella

Ingredients:

  • 2 tablespoons olive oil
  • 3 garlic cloves
  • 1 red bell pepper
  • 1 cup short-grain rice
  • 2 cups chicken broth
  • a pinch saffron threads
  • 1 pound shrimp
  • 1 pound mussels
  • to taste salt
  • to taste black pepper
  • 1 tablespoon fresh parsley

Instructions:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped garlic and red bell pepper to the pan and sauté for about 3 minutes.
  3. Stir in the rice, making sure it gets fully coated in oil.
  4. Pour in the chicken broth and sprinkle in the saffron threads, stir well.
  5. Cover the pan and let the rice cook for about 10 minutes.
  6. Add the shrimp and mussels to the pan, season with salt and pepper, stirring to combine everything.
  7. Cover the pan again and cook for an additional 10 minutes, or until the seafood is fully cooked and the rice has absorbed most of the broth.
  8. Sprinkle the paella with fresh parsley before serving.
