
Quick & Easy Mediterranean Seafood Paella

Ingredients:
- 2 tablespoons olive oil
- 3 garlic cloves
- 1 red bell pepper
- 1 cup short-grain rice
- 2 cups chicken broth
- a pinch saffron threads
- 1 pound shrimp
- 1 pound mussels
- to taste salt
- to taste black pepper
- 1 tablespoon fresh parsley
Instructions:
- Heat the olive oil in a large pan over medium heat.
- Add the chopped garlic and red bell pepper to the pan and sauté for about 3 minutes.
- Stir in the rice, making sure it gets fully coated in oil.
- Pour in the chicken broth and sprinkle in the saffron threads, stir well.
- Cover the pan and let the rice cook for about 10 minutes.
- Add the shrimp and mussels to the pan, season with salt and pepper, stirring to combine everything.
- Cover the pan again and cook for an additional 10 minutes, or until the seafood is fully cooked and the rice has absorbed most of the broth.
- Sprinkle the paella with fresh parsley before serving.
