Quick & Easy Mediterranean Rice Bowl

Ingredients:

  • 1 cup Basmati Rice
  • 2 cups Water
  • 2 tbsp Olive Oil
  • 2 Garlic Cloves
  • 1 cup Chopped Tomatoes
  • 1/2 cup Sliced Olives
  • 1/2 cup Cubed Feta Cheese
  • A Handful Fresh Basil Leaves
  • to taste Salt and Pepper

Instructions:

  1. 1. Rinse the basmati rice under cold water until the water runs clear. This helps to remove the starch and makes for fluffier rice.
  2. 2. In a medium saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and cook for 15 minutes or until the water is absorbed and the rice is tender.
  3. 3. While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the garlic and cook until it begins to brown.
  4. 4. Add the chopped tomatoes and sliced olives to the skillet and cook until they begin to soften, about five minutes.
  5. 5. Once the rice is done, fluff it with a fork and divide it among the serving bowls.
  6. 6. Top each bowl with the tomato and olive mixture, and then evenly distribute the feta and fresh basil leaves over each bowl.
  7. 7. Season each bowl with salt and pepper to taste. Serve immediately and enjoy your Mediterranean Rice Bowl!
