
Quick & Easy Mediterranean Rice Bowl

Ingredients:
- 1 cup Basmati Rice
- 2 cups Water
- 2 tbsp Olive Oil
- 2 Garlic Cloves
- 1 cup Chopped Tomatoes
- 1/2 cup Sliced Olives
- 1/2 cup Cubed Feta Cheese
- A Handful Fresh Basil Leaves
- to taste Salt and Pepper
Instructions:
- 1. Rinse the basmati rice under cold water until the water runs clear. This helps to remove the starch and makes for fluffier rice.
- 2. In a medium saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and cook for 15 minutes or until the water is absorbed and the rice is tender.
- 3. While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the garlic and cook until it begins to brown.
- 4. Add the chopped tomatoes and sliced olives to the skillet and cook until they begin to soften, about five minutes.
- 5. Once the rice is done, fluff it with a fork and divide it among the serving bowls.
- 6. Top each bowl with the tomato and olive mixture, and then evenly distribute the feta and fresh basil leaves over each bowl.
- 7. Season each bowl with salt and pepper to taste. Serve immediately and enjoy your Mediterranean Rice Bowl!
