Quick & Easy Mediterranean Grilled Fish

Ingredients:

  • 2 pieces White fish fillets
  • 2 tablespoons Olive oil
  • 1 zest and juice Lemon
  • 2 cloves Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Cherry tomatoes
  • 0.5 pieces Cucumber
  • 0.5 cup Feta cheese
  • 0.25 cup Fresh basil leaves

Instructions:

  1. Preheat grill on high heat.
  2. Rub the fish fillets with olive oil, lemon zest, crushed garlic, oregano, salt and pepper.
  3. Grill fish for 4-5 minutes on each side or until fish is opaque and flakes easily with a fork.
  4. While the fish is grilling, chop the cherry tomatoes and cucumber, and mix with the feta cheese and basil leaves.
  5. Remove fish from grill and squeeze lemon juice over the top.
  6. Serve the grilled fish with the tomato and cucumber salad on the side.
