
Quick & Easy Mediterranean Grilled Fish

Ingredients:
- 2 pieces White fish fillets
- 2 tablespoons Olive oil
- 1 zest and juice Lemon
- 2 cloves Garlic
- 1 teaspoon Dried oregano
- 0.5 teaspoon Salt
- 0.5 teaspoon Black pepper
- 1 cup Cherry tomatoes
- 0.5 pieces Cucumber
- 0.5 cup Feta cheese
- 0.25 cup Fresh basil leaves
Instructions:
- Preheat grill on high heat.
- Rub the fish fillets with olive oil, lemon zest, crushed garlic, oregano, salt and pepper.
- Grill fish for 4-5 minutes on each side or until fish is opaque and flakes easily with a fork.
- While the fish is grilling, chop the cherry tomatoes and cucumber, and mix with the feta cheese and basil leaves.
- Remove fish from grill and squeeze lemon juice over the top.
- Serve the grilled fish with the tomato and cucumber salad on the side.
