Quick & Easy Mediterranean Chicken

Ingredients:

  • 4 pieces Boneless, Skinless Chicken Breasts
  • 2 tbsp Olive Oil
  • 3 pieces Garlic Cloves
  • 1 piece Lemon
  • 1 tsp Dried Oregano
  • To taste Salt
  • To taste Black Pepper
  • 1 cup Feta Cheese
  • 0.5 cup Olives

Instructions:

  1. Preheat your skillet over medium heat and add olive oil.
  2. Season chicken breasts with salt, pepper, and dried oregano.
  3. Once the skillet is warm, add chicken breasts and cook for about 6-7 minutes each side or until they are cooked through.
  4. While the chicken is cooking, mince the garlic and cut the lemon into thin slices.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the minced garlic and cook for 1-2 minutes.
  7. Add the lemon slices to the skillet and cook for another few minutes, until the lemons are caramelized.
  8. Add the cooked chicken back into the skillet on top of the lemons and garlic.
  9. Top the chicken with feta cheese and olives, cover the skillet and let everything heat up together for a few minutes.
  10. Serve immediately with a side of your choice, and enjoy your quick, easy and delicious Mediterranean Chicken!
