Quick & Easy Japanese Shrimp Fried Rice

Ingredients:

  • 20 count Raw shrimp
  • 3 cups Cooked Japanese rice
  • 2 tablespoons Vegetable oil
  • 1 cup Frozen mixed vegetables
  • 2 tablespoons Soy sauce
  • 2 count Eggs
  • 2 stalks Green onions

Instructions:

  1. 1. Heat 1 tablespoon of oil in a large frying pan or wok over medium high heat.
  2. 2. Add the shrimp and cook until pink, about 2-3 minutes. Remove from the pan and set aside.
  3. 3. In the same pan, add the remaining oil, then add the eggs and scramble them. Once they’re almost cooked, add the cooked rice and frozen vegetables.
  4. 4. Stir everything together and cook for 3-4 minutes until the vegetables are heated through.
  5. 5. Add the cooked shrimp back into the pan, then add the soy sauce. Stir everything together and cook for another 2-3 minutes.
  6. 6. Chop the green onions and sprinkle them over the top of the rice right before serving.
