Quick & Easy Japanese Seafood Rice Bowl

Ingredients:

  • 2 cups short grain rice
  • 2 cups water
  • 200 grams mixed seafood (prawn, squid, mussels)
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake
  • 1 teaspoon sugar
  • 2 stalks spring onions
  • to taste seaweed flakes (optional)

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Then cook the rice with water according to the packet instructions.
  2. In a pan, add the seafood and cook over medium heat until the seafood is cooked through. Remove the seafood from the pan and set aside.
  3. In the same pan, add the soy sauce, mirin, sake, and sugar. Stir until the sugar is dissolved.
  4. Add the cooked seafood into the pan and mix well with the sauce.
  5. Divide the cooked rice into two bowls. Top each bowl with the seafood mixture.
  6. Slice spring onions and sprinkle over the top of each bowl.
  7. Sprinkle seaweed flakes on top, if desired.
  8. Serve immediately and enjoy this quick and delicious Japanese seafood rice bowl.
