Quick & Easy Japanese Rice Bowl - Donburi

Ingredients:

  • 2 cups Japanese short-grain rice
  • 2.5 cups Water
  • 500 g Chicken thighs
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sugar
  • 4 each Green onions
  • 4 each Eggs

Instructions:

  1. Rinse the rice under cold water until the water runs clear. Add the rice and water to a rice cooker and cook according to the machine’s instructions.
  2. While the rice is cooking, cut the chicken into bite-size pieces.
  3. In a large frying pan, heat a splash of oil over medium heat. Add the chicken to the pan and cook until golden and cooked through.
  4. In a small bowl, combine the soy sauce, mirin, and sugar. Pour this over the chicken and continue to cook for another 3-5 minutes, until the sauce has thickened.
  5. Finely chop the green onions and set aside.
  6. In a separate pan, cook the eggs to your liking. Typically soft boiled or fried eggs are used.
  7. Once the rice is cooked, distribute it between four bowls. Top with the chicken, a spoonful of the pan sauce, a sprinkling of green onions, and an egg.
  8. Serve immediately and enjoy your easy and delicious Japanese rice bowl - Donburi!
