
Quick & Easy Japanese Rice Bowl - Donburi

Ingredients:
- 2 cups Japanese short-grain rice
- 2.5 cups Water
- 500 g Chicken thighs
- 3 tablespoons Soy Sauce
- 2 tablespoons Mirin
- 1 tablespoon Sugar
- 4 each Green onions
- 4 each Eggs
Instructions:
- Rinse the rice under cold water until the water runs clear. Add the rice and water to a rice cooker and cook according to the machine’s instructions.
- While the rice is cooking, cut the chicken into bite-size pieces.
- In a large frying pan, heat a splash of oil over medium heat. Add the chicken to the pan and cook until golden and cooked through.
- In a small bowl, combine the soy sauce, mirin, and sugar. Pour this over the chicken and continue to cook for another 3-5 minutes, until the sauce has thickened.
- Finely chop the green onions and set aside.
- In a separate pan, cook the eggs to your liking. Typically soft boiled or fried eggs are used.
- Once the rice is cooked, distribute it between four bowls. Top with the chicken, a spoonful of the pan sauce, a sprinkling of green onions, and an egg.
