
Quick & Easy Italian Rice Balls

Ingredients:
- 3 cups Cooked white rice
- 1 cup Grated Parmesan cheese
- 2 large Eggs
- 1.5 cups Italian bread crumbs
- 1 cup Mozzarella cheese
- as needed for frying Olive oil
- for serving Warm marinara sauce
Instructions:
- In a large bowl, combine the cooked rice, Parmesan cheese, and eggs. Stir until well mixed.
- Take about 2 tablespoons of the rice mixture and flatten it on your hand. Place a small amount of mozzarella cheese in the center, then roll the rice around it to form a ball. Repeat with the remaining rice and cheese.
- Place the bread crumbs in a shallow dish. Roll the rice balls in the bread crumbs until they are evenly coated.
- Heat the olive oil in a large frying pan over medium-high heat. Add the rice balls and cook until they are golden brown on all sides, about 2-3 minutes per side.
- Remove the rice balls from the pan and drain on paper towels.
- Serve the rice balls warm with marinara sauce on the side for dipping.
