Quick & Easy Italian Pork Scaloppine

Ingredients:

  • 1.5 pounds Pork loin
  • 0.5 cups Flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 cloves Garlic
  • 0.5 cup White wine
  • 2 tablespoons Lemon juice
  • 2 tablespoons Parsley

Instructions:

  1. Slice pork loin into 4 pieces and pound each piece until thin.
  2. In a bowl, mix flour, salt, and pepper.
  3. Dredge each piece of pork in the flour mixture, shaking off excess.
  4. Heat olive oil and butter in a skillet over medium heat.
  5. Add pork to skillet, cooking for about 3-4 minutes each side until browned and cooked through. Remove pork to a plate.
  6. In the same skillet, add crushed garlic and saute until fragrant.
  7. Pour in the white wine and lemon juice, letting it simmer and scrape off any bits from the bottom of the skillet.
  8. Return the pork to the skillet, basting with the sauce.
  9. Garnish with parsley right before serving.
