
Quick & Easy Italian Fish Lunch

Ingredients:
- 2 pieces White Fish Fillets (Cod or Halibut)
- 2 tablespoons Olive Oil
- 2 cloves Cloves of garlic
- 14 ounces Crushed Tomatoes
- 1/2 cup Dry White Wine
- 1/2 teaspoon each Italian Herbs (Oregano, Basil, Parsley)
- To Taste Salt and Pepper
Instructions:
- 1. Heat olive oil in a medium-sized pan over medium heat.
- 2. Add the fish fillets to the pan, salt and pepper each side, and cook until lightly browned on both sides, about 3-4 minutes each.
- 3. Remove the fish from the pan and set aside.
- 4. In the same pan, add minced garlic and sauté until aromatic (around 1 minute).
- 5. Pour in the tomatoes and white wine, then stir in the herbs. Bring the mixture to a simmer.
- 6. Return the fish fillets to the pan, nestling them in the sauce. Allow the fish to cook in the sauce for 5-7 minutes, or until it's cooked through and flakes easily with a fork.
- 7. Serve the fish hot, topped with some sauce. Enjoy with salad or pasta on the side if desired.
