Quick & Easy Italian Egg Bruschetta

Ingredients:

  • 4 whole Eggs
  • 1 loaf Italian bread
  • 1 whole Garlic clove
  • 2 tablespoons Olive oil
  • 2 whole Tomatoes
  • .5 cup Basil leaves
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Preheat the grill or broiler. Cut the Italian bread into slices and toast them on both sides.
  2. Rub the toasts with the garlic clove, then brush them with olive oil.
  3. Cut the tomatoes into small cubes, chop the basil leaves and mix them in a bowl. Season with salt and pepper.
  4. Break the eggs into the bowl, then mix gently until combined.
  5. Top each toasted bread slice with the egg mixture, then return them to the grill or broiler until the eggs are lightly set.
  6. Serve immediately for a delicious, quick and easy Italian egg bruschetta.
