
Quick & Easy Italian Egg Bruschetta

Ingredients:
- 4 whole Eggs
- 1 loaf Italian bread
- 1 whole Garlic clove
- 2 tablespoons Olive oil
- 2 whole Tomatoes
- .5 cup Basil leaves
- to taste Salt
- to taste Pepper
Instructions:
- Preheat the grill or broiler. Cut the Italian bread into slices and toast them on both sides.
- Rub the toasts with the garlic clove, then brush them with olive oil.
- Cut the tomatoes into small cubes, chop the basil leaves and mix them in a bowl. Season with salt and pepper.
- Break the eggs into the bowl, then mix gently until combined.
- Top each toasted bread slice with the egg mixture, then return them to the grill or broiler until the eggs are lightly set.
- Serve immediately for a delicious, quick and easy Italian egg bruschetta.
