Quick & Easy Italian Chicken Bruschetta

Ingredients:

  • 2 pieces Chicken breasts
  • 2 medium-sized Tomatoes
  • 2 pieces Garlic cloves
  • 2 tablespoons Olive oil
  • 10 pieces Basil leaves
  • 1 whole Baguette
  • 100 grams Mozzarella cheese
  • To taste Salt and pepper

Instructions:

  1. Preheat the oven to 200°C (390°F). Cut the baguette into slices and toast them lightly on a baking sheet in the oven.
  2. While the bread is toasting, cut the chicken into bite-sized pieces. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chicken and cook until golden brown and cooked through, about 7-10 minutes.
  3. While the chicken is cooking, chop the tomatoes and basil. Mix them together with 1 tablespoon of olive oil, salt, and pepper.
  4. After the chicken is cooked, remove it from the heat and stir it into the tomato and basil mixture.
  5. Take the toasted bread out of the oven and rub it with garlic cloves for added flavor.
  6. Spoon the chicken mixture onto the toasted bread slices. Sprinkle the slices with grated mozzarella cheese.
  7. Bake the bruschetta in oven for about 5-7 minutes, or until the cheese is melted.
