
Quick & Easy Italian Chicken Bruschetta

Ingredients:
- 2 pieces Chicken breasts
- 2 medium-sized Tomatoes
- 2 pieces Garlic cloves
- 2 tablespoons Olive oil
- 10 pieces Basil leaves
- 1 whole Baguette
- 100 grams Mozzarella cheese
- To taste Salt and pepper
Instructions:
- Preheat the oven to 200°C (390°F). Cut the baguette into slices and toast them lightly on a baking sheet in the oven.
- While the bread is toasting, cut the chicken into bite-sized pieces. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chicken and cook until golden brown and cooked through, about 7-10 minutes.
- While the chicken is cooking, chop the tomatoes and basil. Mix them together with 1 tablespoon of olive oil, salt, and pepper.
- After the chicken is cooked, remove it from the heat and stir it into the tomato and basil mixture.
- Take the toasted bread out of the oven and rub it with garlic cloves for added flavor.
- Spoon the chicken mixture onto the toasted bread slices. Sprinkle the slices with grated mozzarella cheese.
- Bake the bruschetta in oven for about 5-7 minutes, or until the cheese is melted.
