Quick & Easy Italian Beef Pasta

Ingredients:

  • 1 lb ground beef
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 large onion
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Italian seasoning
  • 12 oz penne pasta
  • to taste salt
  • to taste pepper

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef, breaking it up with a spoon, until it's browned and cooked through.
  2. Meanwhile, finely chop the onion and mince the garlic.
  3. Once the beef is browned, remove it from the skillet and set it aside. Keep the pan on the heat.
  4. Add the chopped onion and minced garlic to the skillet. Cook for about 5 minutes, until the onion is translucent and the garlic is fragrant.
  5. Return the cooked beef to the pan. Add the diced tomatoes and Italian seasoning. Stir everything together. Allow this to simmer for 10 minutes.
  6. Meanwhile, cook the pasta according to the package instructions. Once cooked, drain and set aside.
  7. Once the beef mixture has simmered, taste it and add salt and pepper as needed.
  8. Add the cooked pasta to the beef mixture. Stir everything until it's well combined. Allow this to cook for a couple of more minutes, just to let the flavors meld together.
  9. Serve hot, maybe with some grated Parmesan cheese on top. Enjoy your quick & easy Italian beef pasta!
