
Quick & Easy Indian Pork Curry

Ingredients:
- 1 pound Pork loin
- 2 tablespoons Vegetable oil
- 1 Large, finely chopped Onion
- 2 cloves minced Garlic
- 2 tablespoons Curry powder
- 1 tablespoon Tomato paste
- 1 can (14 ounces) Coconut milk
- to taste Salt and pepper
- for garnish Fresh coriander leaves
Instructions:
- Cut the pork into bite-size pieces and season with salt and pepper.
- Heat the vegetable oil in a large skillet over medium heat. Add the pork pieces and brown them on all sides. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until it is softened and starting to brown. Add the minced garlic and cook for another minute.
- Stir in the curry powder and tomato paste, coating the onions and garlic. Cook for another minute until the spices are fragrant.
- Return the pork to the skillet and stir well to coat with the spice mixture. Add the coconut milk, bring to a simmer, and let cook for 15-20 minutes until the pork is cooked through and the sauce has thickened.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve hot over rice or with flatbread, garnished with fresh coriander leaves.
