Quick & Easy Indian Pork Curry

Ingredients:

  • 1 pound Pork loin
  • 2 tablespoons Vegetable oil
  • 1 Large, finely chopped Onion
  • 2 cloves minced Garlic
  • 2 tablespoons Curry powder
  • 1 tablespoon Tomato paste
  • 1 can (14 ounces) Coconut milk
  • to taste Salt and pepper
  • for garnish Fresh coriander leaves

Instructions:

  1. Cut the pork into bite-size pieces and season with salt and pepper.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the pork pieces and brown them on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until it is softened and starting to brown. Add the minced garlic and cook for another minute.
  4. Stir in the curry powder and tomato paste, coating the onions and garlic. Cook for another minute until the spices are fragrant.
  5. Return the pork to the skillet and stir well to coat with the spice mixture. Add the coconut milk, bring to a simmer, and let cook for 15-20 minutes until the pork is cooked through and the sauce has thickened.
  6. Taste and adjust seasoning with more salt and pepper if needed.
  7. Serve hot over rice or with flatbread, garnished with fresh coriander leaves.
