Quick & Easy Indian Fried Rice

Ingredients:

  • 2 cups Cooked rice
  • 3 tbsp Vegetable oil
  • 1 tsp Mustard seeds
  • 2 pieces Green chilies
  • 2 cloves Garlic
  • 1 medium Sliced onion
  • 1 cup Mixed vegetables (carrots, peas, bell peppers)
  • 1/2 tsp Turmeric
  • 1 tsp Curry powder
  • to taste Salt
  • 2 tbsp Freshly chopped coriander

Instructions:

  1. Heat 2 tablespoons of oil in a large skillet over medium heat.
  2. Add mustard seeds. Once they begin to sputter, add green chilies and garlic. Stir for a minute until aromatic.
  3. Add onions. Saute until they turn translucent.
  4. Add mixed vegetables. Cook until they are soft and tender.
  5. Stir in turmeric, curry powder, and salt. Cook for 2 minutes.
  6. Add cooked rice. Mix well, ensuring all the grains are coated with the spices. Cook for 5 minutes.
  7. Garnish with freshly chopped coriander and serve hot.
