
Quick & Easy Indian Fried Rice

Ingredients:
- 2 cups Cooked rice
- 3 tbsp Vegetable oil
- 1 tsp Mustard seeds
- 2 pieces Green chilies
- 2 cloves Garlic
- 1 medium Sliced onion
- 1 cup Mixed vegetables (carrots, peas, bell peppers)
- 1/2 tsp Turmeric
- 1 tsp Curry powder
- to taste Salt
- 2 tbsp Freshly chopped coriander
Instructions:
- Heat 2 tablespoons of oil in a large skillet over medium heat.
- Add mustard seeds. Once they begin to sputter, add green chilies and garlic. Stir for a minute until aromatic.
- Add onions. Saute until they turn translucent.
- Add mixed vegetables. Cook until they are soft and tender.
- Stir in turmeric, curry powder, and salt. Cook for 2 minutes.
- Add cooked rice. Mix well, ensuring all the grains are coated with the spices. Cook for 5 minutes.
- Garnish with freshly chopped coriander and serve hot.
