
Quick & Easy Indian Fish Curry

Ingredients:
- 500 grams Fish fillets
- 1 large Onion
- 2 medium Tomatoes
- 2 Garlic cloves
- 1 inch piece Ginger
- 1 Green chili
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- 1 1/2 teaspoon Coriander powder
- 1/2 teaspoon Cumin powder
- to taste Salt
- 200 ml Coconut milk
- a handful Fresh coriander leaves
- 2 tablespoons Oil
Instructions:
- Chop the onions, tomatoes, green chili, garlic and ginger.
- Heat oil in a pan and sauté the onions until they turn golden brown.
- Add the chopped tomatoes, ginger, garlic, green chili and all the spices to the pan. Cook until the tomatoes become soft.
- Add the fish fillets to the pan and cover with the spicy onion and tomato mixture. Cook on medium heat for 5-7 minutes.
- Pour the coconut milk into the pan and season with salt. Simmer for a couple of minutes until the fish is cooked through and the sauce has thickened.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
