Quick & Easy Indian Fish Curry

Ingredients:

  • 500 grams Fish fillets
  • 1 large Onion
  • 2 medium Tomatoes
  • 2 Garlic cloves
  • 1 inch piece Ginger
  • 1 Green chili
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Cumin powder
  • to taste Salt
  • 200 ml Coconut milk
  • a handful Fresh coriander leaves
  • 2 tablespoons Oil

Instructions:

  1. Chop the onions, tomatoes, green chili, garlic and ginger.
  2. Heat oil in a pan and sauté the onions until they turn golden brown.
  3. Add the chopped tomatoes, ginger, garlic, green chili and all the spices to the pan. Cook until the tomatoes become soft.
  4. Add the fish fillets to the pan and cover with the spicy onion and tomato mixture. Cook on medium heat for 5-7 minutes.
  5. Pour the coconut milk into the pan and season with salt. Simmer for a couple of minutes until the fish is cooked through and the sauce has thickened.
  6. Garnish with fresh coriander leaves and serve hot with steamed rice.
