Quick & Easy Indian Egg Bhurji

Ingredients:

  • 4 Eggs
  • 1 medium Onion
  • 1 medium Tomato
  • 1 Green chili pepper
  • to taste Salt
  • 1/2 teaspoon Red chili powder
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin seeds
  • 2 tablespoon Oil
  • for garnish Coriander leaves

Instructions:

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add finely chopped onions and green chili pepper. Fry until onions become soft.
  3. Add chopped tomatoes, salt, turmeric powder, and red chili powder. Cook until tomatoes become mushy and all the spices blend well.
  4. Break the eggs into the pan and scramble well with the mixture.
  5. Cook until the eggs are fully cooked and scramble to your liking.
  6. Garnish with freshly chopped coriander leaves.
  7. Quick & Easy Indian Egg Bhurji is ready to serve. Enjoy with toasted bread or as a filling for sandwiches.
