
Quick & Easy Indian Beef Curry

Ingredients:
- 1 lb Beef stew meat
- 1 large Onion
- 3 Garlic cloves
- 1 inch piece Ginger
- 2 tbsp Curry powder
- 2 tbsp Tomato paste
- 1 can Coconut milk
- to taste Salt
- to taste Black Pepper
- 1 bunch Coriander leaves
- 2 tbsp Cooking oil
Instructions:
- Heat oil in a large pan over medium-high heat.
- Add the beef and brown on all sides, then remove from the pan.
- Add the onion to the pan and cook until softened.
- Add the garlic, ginger, and curry powder and cook for another minute.
- Return the beef to the pan, add the tomato paste and mix well.
- Pour in the coconut milk, bring to a simmer, and season with salt and pepper.
- Cover and cook on low for 15 minutes until the beef is cooked through and the flavors are well combined.
- Garnish with fresh coriander leaves and serve hot.
