Quick & Easy Indian Beef Curry

Ingredients:

  • 1 lb Beef stew meat
  • 1 large Onion
  • 3 Garlic cloves
  • 1 inch piece Ginger
  • 2 tbsp Curry powder
  • 2 tbsp Tomato paste
  • 1 can Coconut milk
  • to taste Salt
  • to taste Black Pepper
  • 1 bunch Coriander leaves
  • 2 tbsp Cooking oil

Instructions:

  1. Heat oil in a large pan over medium-high heat.
  2. Add the beef and brown on all sides, then remove from the pan.
  3. Add the onion to the pan and cook until softened.
  4. Add the garlic, ginger, and curry powder and cook for another minute.
  5. Return the beef to the pan, add the tomato paste and mix well.
  6. Pour in the coconut milk, bring to a simmer, and season with salt and pepper.
  7. Cover and cook on low for 15 minutes until the beef is cooked through and the flavors are well combined.
  8. Garnish with fresh coriander leaves and serve hot.
