
Quick & Easy Fruit Pasta Primavera

Ingredients:
- 8 ounces Pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 cup Zucchini
- 1 whole Bell pepper
- 1 cup Cherry tomatoes
- 1 whole Lemon
- 1/2 cup Parmesan cheese
- 1/4 cup Fresh basil
- to taste Salt and pepper
Instructions:
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
- Add the zucchini, bell pepper, and cherry tomatoes. Cook for about 5 minutes, or until the vegetables are just tender.
- Zest the lemon and squeeze the juice. Add both the zest and juice to the pan.
- Add the cooked pasta to the pan and stir to combine. Cook for another 2-3 minutes, or until the pasta is heated through.
- Serve the pasta with a sprinkle of Parmesan cheese and fresh basil on top. Season with salt and pepper to taste.
