Quick & Easy Fruit Pasta Primavera

Ingredients:

  • 8 ounces Pasta
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 cup Zucchini
  • 1 whole Bell pepper
  • 1 cup Cherry tomatoes
  • 1 whole Lemon
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh basil
  • to taste Salt and pepper

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the zucchini, bell pepper, and cherry tomatoes. Cook for about 5 minutes, or until the vegetables are just tender.
  4. Zest the lemon and squeeze the juice. Add both the zest and juice to the pan.
  5. Add the cooked pasta to the pan and stir to combine. Cook for another 2-3 minutes, or until the pasta is heated through.
  6. Serve the pasta with a sprinkle of Parmesan cheese and fresh basil on top. Season with salt and pepper to taste.
