Quick & Easy Fruit Chicken Salad

Ingredients:

  • 2 pieces Chicken breasts
  • 4 cups Mixed greens
  • 2 cups Assorted fruits (e.g., apples, grapes, strawberries)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • to taste Salt and pepper

Instructions:

  1. Cook the chicken breasts on a grill or in a skillet until no longer pink in the center, about 6-7 minutes per side. Once cooked, set aside to cool before slicing into thin strips.
  2. While the chicken is cooling, in a large bowl, combine the mixed greens and assorted fruits.
  3. In a small bowl, whisk together the lemon juice, olive oil, and honey to create the dressing. Season with salt and pepper to your liking.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Add the sliced chicken on top of the salad and serve immediately.
