
Quick & Easy Fruit Chicken Salad

Ingredients:
- 2 pieces Chicken breasts
- 4 cups Mixed greens
- 2 cups Assorted fruits (e.g., apples, grapes, strawberries)
- 1 tablespoon Lemon juice
- 2 tablespoons Olive oil
- 1 tablespoon Honey
- to taste Salt and pepper
Instructions:
- Cook the chicken breasts on a grill or in a skillet until no longer pink in the center, about 6-7 minutes per side. Once cooked, set aside to cool before slicing into thin strips.
- While the chicken is cooling, in a large bowl, combine the mixed greens and assorted fruits.
- In a small bowl, whisk together the lemon juice, olive oil, and honey to create the dressing. Season with salt and pepper to your liking.
- Drizzle the dressing over the salad and toss gently to combine.
- Add the sliced chicken on top of the salad and serve immediately.
