
Quick & Easy French Seafood Stew

Ingredients:
- 2 tablespoons Olive oil
- 2 Garlic cloves, minced
- 1 Onion, finely chopped
- 1 can (14.5 oz) Canned diced tomatoes
- 1 cup White wine
- 2 cups Fish stock
- 1.5 pounds Mixed seafood (such as shrimp, clams, mussels)
- 2 tablespoons Parsley, chopped
- to taste Salt and pepper
Instructions:
- 1. Heat olive oil in a large pot over medium heat. Add garlic and onions, and cook until they are softened but not browned.
- 2. Stir in the tomatoes, white wine, and fish stock. Bring to a simmer.
- 3. Add the mixed seafood to the pot, cover, and cook for about 8-10 minutes, or until the seafood is cooked through.
- 4. Season with salt and pepper, and stir in the chopped parsley.
- 5. Serve the stew warm with crusty French bread.
