Quick & Easy French Seafood Stew

Ingredients:

  • 2 tablespoons Olive oil
  • 2 Garlic cloves, minced
  • 1 Onion, finely chopped
  • 1 can (14.5 oz) Canned diced tomatoes
  • 1 cup White wine
  • 2 cups Fish stock
  • 1.5 pounds Mixed seafood (such as shrimp, clams, mussels)
  • 2 tablespoons Parsley, chopped
  • to taste Salt and pepper

Instructions:

  1. 1. Heat olive oil in a large pot over medium heat. Add garlic and onions, and cook until they are softened but not browned.
  2. 2. Stir in the tomatoes, white wine, and fish stock. Bring to a simmer.
  3. 3. Add the mixed seafood to the pot, cover, and cook for about 8-10 minutes, or until the seafood is cooked through.
  4. 4. Season with salt and pepper, and stir in the chopped parsley.
  5. 5. Serve the stew warm with crusty French bread.
