
Quick & Easy French Rice Pilaf

Ingredients:
- 1 cup Long grain rice
- 2 tablespoons Butter
- 1 small Onion
- 2 cloves Garlic
- 2 cups Chicken stock
- 1 Carrot
- 1 cup Peas
- to taste Salt and pepper
Instructions:
- Melt the butter over medium heat in a large pan. Add the finely chopped onion and garlic and sauté until softened and translucent.
- Add the rice to the pan, stirring to coat each grain in butter. Cook for 2-3 minutes until the edges of the rice become slightly translucent.
- Peel the carrot and dice into small cubes. Add the carrot and peas to the pan, stirring to combine.
- Pour in the chicken stock and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for around 15-17 minutes, or until all the liquid is absorbed.
- Season the pilaf with salt and pepper to taste. Serve while hot.
