Quick & Easy French Rice Pilaf

Ingredients:

  • 1 cup Long grain rice
  • 2 tablespoons Butter
  • 1 small Onion
  • 2 cloves Garlic
  • 2 cups Chicken stock
  • 1 Carrot
  • 1 cup Peas
  • to taste Salt and pepper

Instructions:

  1. Melt the butter over medium heat in a large pan. Add the finely chopped onion and garlic and sauté until softened and translucent.
  2. Add the rice to the pan, stirring to coat each grain in butter. Cook for 2-3 minutes until the edges of the rice become slightly translucent.
  3. Peel the carrot and dice into small cubes. Add the carrot and peas to the pan, stirring to combine.
  4. Pour in the chicken stock and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for around 15-17 minutes, or until all the liquid is absorbed.
  5. Season the pilaf with salt and pepper to taste. Serve while hot.
