Quick & Easy French Ratatouille

Ingredients:

  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 cloves Garlic
  • 1 large Red bell pepper
  • 1 large Courgette
  • 1 large Aubergine
  • 5 medium Tomatoes
  • 1 bunch Fresh basil
  • 1 bunch Fresh thyme
  • to taste Salt and black pepper

Instructions:

  1. Heat the olive oil in a large frying pan over medium heat.
  2. Add the finely chopped onion and cook until it becomes translucent.
  3. Add the minced garlic and chopped red bell pepper, cooking for another 5 minutes until softened.
  4. Slice the courgette and aubergine into thin rounds and add to the pan, cooking for another 5-7 minutes.
  5. Chop the tomatoes and add them to the pan, along with the salt and pepper.
  6. Lower the heat, cover the pan, and allow everything to simmer for about 20 minutes.
  7. Taste and adjust the seasonings as needed, then garnish with fresh basil and thyme before serving.
