
Quick & Easy French Ratatouille

Ingredients:
- 2 tablespoons Olive oil
- 1 large Onion
- 3 cloves Garlic
- 1 large Red bell pepper
- 1 large Courgette
- 1 large Aubergine
- 5 medium Tomatoes
- 1 bunch Fresh basil
- 1 bunch Fresh thyme
- to taste Salt and black pepper
Instructions:
- Heat the olive oil in a large frying pan over medium heat.
- Add the finely chopped onion and cook until it becomes translucent.
- Add the minced garlic and chopped red bell pepper, cooking for another 5 minutes until softened.
- Slice the courgette and aubergine into thin rounds and add to the pan, cooking for another 5-7 minutes.
- Chop the tomatoes and add them to the pan, along with the salt and pepper.
- Lower the heat, cover the pan, and allow everything to simmer for about 20 minutes.
- Taste and adjust the seasonings as needed, then garnish with fresh basil and thyme before serving.
