Quick & Easy Egg Fried Rice

Ingredients:

  • 2 whole Eggs
  • 2 cups Cooked rice
  • 2 stalks Green onions
  • 2 tablespoons Soy sauce
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Sesame oil

Instructions:

  1. Beat the eggs in a bowl and set aside.
  2. Chop the green onions and separate the whites from the greens.
  3. Heat the vegetable oil in a large pan or wok over medium heat.
  4. Add the white parts of the green onions and cook for about 1 minute until fragrant.
  5. Add the beaten eggs to the pan and scramble them until mostly cooked through, then set aside.
  6. In the same pan, add the cooked rice and stir to combine with the onions and eggs.
  7. Drizzle the soy sauce and sesame oil over the rice and stir to combine.
  8. Continue cooking the rice for a few more minutes until it's heated through and beginning to brown.
  9. Add the green parts of the onions and cook for another minute.
  10. Serve the egg fried rice hot, topped with more green onions if desired.
