Quick & Easy Chinese Egg Fried Rice

Ingredients:

  • 4 pieces Eggs
  • 3 cups Day old white rice
  • 4 stalks Green onions
  • 1 piece Carrot
  • 1 cup Frozen peas
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Cooking oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper

Instructions:

  1. Cook the rice in advance or use leftover rice. It is essential to use dry, day-old rice for this recipe to prevent the dish from becoming mushy.
  2. Heat oil in a large skillet or wok over medium-high heat.
  3. Beat the eggs and pour them into the skillet. Cook without stirring until they set, then break up the eggs into small pieces.
  4. Add the carrots and peas to the skillet, cooking until they’re heated through.
  5. Stir in the rice and green onions, mixing everything together well.
  6. Add soy sauce, salt, and pepper, stirring to combine and evenly distribute the seasonings.
  7. Serve hot with additional sliced green onions on top for garnish, if desired.
