Ingredients:
- 4 pieces Eggs
- 3 cups Day old white rice
- 4 stalks Green onions
- 1 piece Carrot
- 1 cup Frozen peas
- 2 tablespoons Soy Sauce
- 2 tablespoons Cooking oil
- 0.5 teaspoon Salt
- 0.5 teaspoon Pepper
Instructions:
- Cook the rice in advance or use leftover rice. It is essential to use dry, day-old rice for this recipe to prevent the dish from becoming mushy.
- Heat oil in a large skillet or wok over medium-high heat.
- Beat the eggs and pour them into the skillet. Cook without stirring until they set, then break up the eggs into small pieces.
- Add the carrots and peas to the skillet, cooking until they’re heated through.
- Stir in the rice and green onions, mixing everything together well.
- Add soy sauce, salt, and pepper, stirring to combine and evenly distribute the seasonings.
- Serve hot with additional sliced green onions on top for garnish, if desired.
