Quick & Easy Chicken Quesadillas

Ingredients:

  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 packet Taco seasoning mix
  • 1/2 cup Water
  • 8 pieces Flour tortillas
  • 2 cups Shredded Mexican blend cheese

Instructions:

  1. 1. In a skillet over medium heat, sear the chicken breasts in olive oil until cooked through, about 5-7 minutes on each side. Remove from the skillet and shred the chicken.
  2. 2. In the same skillet, add the shredded chicken, taco seasoning, and water. Stir well and simmer on low for 10 minutes.
  3. 3. Preheat another skillet over medium heat. Place a tortilla in the skillet. Add a layer of cheese, then a layer of the chicken mixture, then another layer of cheese. Top with another tortilla.
  4. 4. Cook until the bottom tortilla is golden brown and crispy, about 3-4 minutes, then flip and cook the other side until golden brown and crispy.
  5. 5. Repeat steps 3 and 4 for the remaining quesadillas. Cut each quesadilla into quarters before serving.
