
Quick & Easy Chicken Quesadillas

Ingredients:
- 2 pieces Chicken breasts
- 2 tablespoons Olive oil
- 1 packet Taco seasoning mix
- 1/2 cup Water
- 8 pieces Flour tortillas
- 2 cups Shredded Mexican blend cheese
Instructions:
- 1. In a skillet over medium heat, sear the chicken breasts in olive oil until cooked through, about 5-7 minutes on each side. Remove from the skillet and shred the chicken.
- 2. In the same skillet, add the shredded chicken, taco seasoning, and water. Stir well and simmer on low for 10 minutes.
- 3. Preheat another skillet over medium heat. Place a tortilla in the skillet. Add a layer of cheese, then a layer of the chicken mixture, then another layer of cheese. Top with another tortilla.
- 4. Cook until the bottom tortilla is golden brown and crispy, about 3-4 minutes, then flip and cook the other side until golden brown and crispy.
- 5. Repeat steps 3 and 4 for the remaining quesadillas. Cut each quesadilla into quarters before serving.
