
Quick & Easy Chicken Quesadilla

Ingredients:
- 2 cups Shredded cooked chicken
- 8 pieces Flour tortillas
- 2 cups Shredded Mexican cheese blend
- 2 tablespoons Butter
- to serve Guacamole, sour cream and salsa
Instructions:
- Spread 1/2 cup chicken over half of each tortilla. Sprinkle 1/2 cup cheese over chicken on each tortilla. Fold tortillas in half, pressing gently.
- Heat a large nonstick skillet over medium heat. Add 1 tablespoon butter; melt. Place 2 tortillas in skillet; cook, turning once, until golden brown and crisp and cheese is melted, 2 to 4 minutes per side. Repeat with remaining butter and tortillas.
- Cut each quesadilla into 4 wedges. Serve warm with guacamole, sour cream and salsa.
