
Quick & Easy Chicken Fried Rice

Ingredients:
- 2 cups White Rice
- 2 pieces Boneless Chicken Breast
- 1 cup Mixed Vegetables (e.g. Carrots, peas, corn)
- 2 eggs Scrambled egg
- 3 tablespoons Soy Sauce
- 2 tablespoons Cooking oil
- 2 teaspoons Sesame oil
- 2 cloves Garlic Clove (minced)
- 2 stalks Green Onions
Instructions:
- Cook the rice as per the instructions on the packet. Set aside when done.
- Heat 1 tablespoon of cooking oil in a large pan over medium heat. Add the diced chicken breast, season with a pinch of salt and pepper and cook until no longer pink. Remove from the pan and set aside.
- In the same pan, add another tablespoon of cooking oil, followed by the minced garlic. Stir-fry the garlic until golden brown.
- Add the mixed vegetables to the pan, and fry until they are soft and cooked.
- Next, add the cooked chicken and rice back into the pan. Stir everything together.
- Pour the soy sauce over top and add the sesame oil. Mix all the ingredients together.
- Push everything to one side of the pan and scramble the eggs on the empty side. Mix the cooked eggs with the rest of the ingredients in the pan.
- Garnish with chopped green onions, then serve.
