Quick & Easy Chicken Fried Rice

Ingredients:

  • 2 cups White Rice
  • 2 pieces Boneless Chicken Breast
  • 1 cup Mixed Vegetables (e.g. Carrots, peas, corn)
  • 2 eggs Scrambled egg
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Cooking oil
  • 2 teaspoons Sesame oil
  • 2 cloves Garlic Clove (minced)
  • 2 stalks Green Onions

Instructions:

  1. Cook the rice as per the instructions on the packet. Set aside when done.
  2. Heat 1 tablespoon of cooking oil in a large pan over medium heat. Add the diced chicken breast, season with a pinch of salt and pepper and cook until no longer pink. Remove from the pan and set aside.
  3. In the same pan, add another tablespoon of cooking oil, followed by the minced garlic. Stir-fry the garlic until golden brown.
  4. Add the mixed vegetables to the pan, and fry until they are soft and cooked.
  5. Next, add the cooked chicken and rice back into the pan. Stir everything together.
  6. Pour the soy sauce over top and add the sesame oil. Mix all the ingredients together.
  7. Push everything to one side of the pan and scramble the eggs on the empty side. Mix the cooked eggs with the rest of the ingredients in the pan.
  8. Garnish with chopped green onions, then serve.
