Quick & Easy Chicken Enchiladas

Ingredients:

  • 2 cups shredded chicken
  • 2 cups enchilada sauce
  • 8 pieces corn tortillas
  • 1.5 cups shredded cheese
  • to taste chopped cilantro
  • to taste diced onions
  • to taste sliced jalapeños

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a medium saucepan over medium heat, warm the enchilada sauce until hot.
  3. Dip each tortilla into the hot sauce for a few seconds to soften it.
  4. Lay the dipped tortilla on a plate, and place a handful of shredded chicken on one side of the tortilla.
  5. Roll up the tortilla and place it in a baking dish, seam side down.
  6. Repeat with the remaining tortillas and chicken.
  7. Pour any remaining sauce over the top of the enchiladas in the baking dish.
  8. Sprinkle the shredded cheese over the top.
  9. Bake the enchiladas for 10-15 minutes, or until the cheese is melted and bubbling.
  10. Garnish with chopped cilantro, diced onions, and sliced jalapeños before serving.
