
Quick & Easy Chicken Enchiladas

Ingredients:
- 2 cups shredded chicken
- 2 cups enchilada sauce
- 8 pieces corn tortillas
- 1.5 cups shredded cheese
- to taste chopped cilantro
- to taste diced onions
- to taste sliced jalapeños
Instructions:
- Preheat oven to 375°F (190°C).
- In a medium saucepan over medium heat, warm the enchilada sauce until hot.
- Dip each tortilla into the hot sauce for a few seconds to soften it.
- Lay the dipped tortilla on a plate, and place a handful of shredded chicken on one side of the tortilla.
- Roll up the tortilla and place it in a baking dish, seam side down.
- Repeat with the remaining tortillas and chicken.
- Pour any remaining sauce over the top of the enchiladas in the baking dish.
- Sprinkle the shredded cheese over the top.
- Bake the enchiladas for 10-15 minutes, or until the cheese is melted and bubbling.
- Garnish with chopped cilantro, diced onions, and sliced jalapeños before serving.
