Quick & Easy Chicken Congee

Ingredients:

  • 2 whole Chicken breasts
  • 1 cup Rice
  • 6 cups Water
  • to taste Salt
  • to taste Pepper
  • 1 bunch Green onion
  • 1 teaspoon, minced Ginger

Instructions:

  1. In a large pot, add the chicken breasts, rice, and water. Bring to a boil.
  2. Reduce heat to low and let it simmer, skimming off any foam that forms on top.
  3. After 20 minutes, remove the chicken and shred it. Return the shredded chicken to the pot.
  4. Add salt, pepper, minced ginger and continue to simmer for another 10 minutes. The congee should have a creamy consistency.
  5. Chop the green onions finely and garnish the congee before serving. Enjoy this quick and easy chicken congee for breakfast.
