
Quick & Easy Chicken Congee

Ingredients:
- 2 whole Chicken breasts
- 1 cup Rice
- 6 cups Water
- to taste Salt
- to taste Pepper
- 1 bunch Green onion
- 1 teaspoon, minced Ginger
Instructions:
- In a large pot, add the chicken breasts, rice, and water. Bring to a boil.
- Reduce heat to low and let it simmer, skimming off any foam that forms on top.
- After 20 minutes, remove the chicken and shred it. Return the shredded chicken to the pot.
- Add salt, pepper, minced ginger and continue to simmer for another 10 minutes. The congee should have a creamy consistency.
- Chop the green onions finely and garnish the congee before serving. Enjoy this quick and easy chicken congee for breakfast.
