
Quick & Easy Chicken and Rice

Ingredients:
- 1 tablespoon Olive oil
- 2 units Boneless, skinless chicken breasts
- to taste Salt
- to taste Black pepper
- 2 cloves Garlic
- 2 cups Cooked rice
- 1 cup Frozen mixed vegetables
- 2 tablespoons Soy sauce
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet and cook until golden and no longer pink in the center, about 7 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute.
- Stir in the cooked rice and mixed vegetables, cooking until the vegetables are heated through, about 5 minutes.
- Slice the chicken and return it to the skillet, stirring to combine. Drizzle with the soy sauce and stir until everything is well coated. Taste and add more salt and pepper, if necessary.
- Serve immediately.
