
Quick & Easy Breakfast Fried Rice

Ingredients:
- 3 cups Cooked rice
- 4 Eggs
- 4 Bacon strips
- 2 stalks Spring onions
- 2 tbsp Soy sauce
- 1 tsp Sesame oil
- to taste Salt
- to taste Black pepper
Instructions:
- Cook the bacon in a large non-stick pan over medium heat until crispy. Remove from the pan & set aside.
- Crack the eggs into the same pan and scramble until just set. Remove from the pan and set aside with the bacon.
- In the same pan, add the cooked rice and stir fry for 2-3 minutes.
- Chop the bacon into small pieces and add to the pan along with the scrambled eggs.
- Add the soy sauce, sesame oil, salt, and pepper. Stir fry for another 2-3 minutes.
- Finally, chop and sprinkle the spring onions over the top of the rice just before serving.
