Quick & Easy Breakfast Fried Rice

Ingredients:

  • 3 cups Cooked rice
  • 4 Eggs
  • 4 Bacon strips
  • 2 stalks Spring onions
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Cook the bacon in a large non-stick pan over medium heat until crispy. Remove from the pan & set aside.
  2. Crack the eggs into the same pan and scramble until just set. Remove from the pan and set aside with the bacon.
  3. In the same pan, add the cooked rice and stir fry for 2-3 minutes.
  4. Chop the bacon into small pieces and add to the pan along with the scrambled eggs.
  5. Add the soy sauce, sesame oil, salt, and pepper. Stir fry for another 2-3 minutes.
  6. Finally, chop and sprinkle the spring onions over the top of the rice just before serving.
