
Quick & Easy Beef Enchiladas

Ingredients:
- 1 pound Ground beef
- 2 cups Mexican blend cheese
- 10 oz Can enchilada sauce
- 1 medium, chopped Onion
- 2 minced Garlic cloves
- 15 oz, rinsed and drained Can black beans
- 8 8 inches Flour tortillas
- as needed Cooking oil
- to taste Salt and pepper
- for garnish chopped Fresh cilantro
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat oil over medium-high heat. Add ground beef, garlic, and onion. Cook until beef is no longer pink and the onion is soft. Drain excess fat.
- Stir in half of the enchilada sauce and the black beans. Bring the mixture to a simmer, season with salt and pepper, and then remove from heat.
- Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Sprinkle cheese on top of the beef. Roll up tightly and place seam side down in a greased 13x9-in. baking dish.
- Top with the remaining enchilada sauce and sprinkle with the remaining cheese.
- Bake, uncovered, until cheese is melted and enchiladas are heated through, about 20 minutes.
- Garnish with cilantro before serving.
