Quick & Easy Beef Enchiladas

Ingredients:

  • 1 pound Ground beef
  • 2 cups Mexican blend cheese
  • 10 oz Can enchilada sauce
  • 1 medium, chopped Onion
  • 2 minced Garlic cloves
  • 15 oz, rinsed and drained Can black beans
  • 8 8 inches Flour tortillas
  • as needed Cooking oil
  • to taste Salt and pepper
  • for garnish chopped Fresh cilantro

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat oil over medium-high heat. Add ground beef, garlic, and onion. Cook until beef is no longer pink and the onion is soft. Drain excess fat.
  3. Stir in half of the enchilada sauce and the black beans. Bring the mixture to a simmer, season with salt and pepper, and then remove from heat.
  4. Spoon about 1/4 cup of the beef mixture down the center of each tortilla. Sprinkle cheese on top of the beef. Roll up tightly and place seam side down in a greased 13x9-in. baking dish.
  5. Top with the remaining enchilada sauce and sprinkle with the remaining cheese.
  6. Bake, uncovered, until cheese is melted and enchiladas are heated through, about 20 minutes.
  7. Garnish with cilantro before serving.
