Quick & Easy Beef Bourguignon

Ingredients:

  • 1 pound Beef chuck
  • to taste Salt
  • to taste Ground Black Pepper
  • 1.5 cups Red Wine
  • 3 cloves Garlic cloves
  • 1 Onion
  • 2 Carrots
  • 1 cup Mushrooms
  • 1.5 cups Beef Broth
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Thyme
  • 2 leaves Bay Leaf
  • 2 tablespoons Butter

Instructions:

  1. Cut the beef into 1-inch cubes and season with the salt and pepper. Brown it in a large pot with the butter over medium-high heat. This should take about 5 minutes.
  2. Take the beef out of the pot and set it aside in a bowl. In the same pot, add garlic, chopped onion and carrots. Cook until the onions are softened.
  3. Add the tomato paste to the veggies and stir until everything is coated.
  4. Add the red wine to the pot, scraping the bottom to release any browned bits.
  5. Add in the beef again, with mushrooms, beef broth, thyme, and bay leaves.
  6. Bring the pot to a boil, then lower the heat and simmer for 30 minutes or until beef is tender.
  7. Taste and adjust seasoning if necessary. Remove the bay leaves before serving. It's delicious served with mashed potatoes or crusty bread.
