
Quick & Easy Beef Bourguignon

Ingredients:
- 1 pound Beef chuck
- to taste Salt
- to taste Ground Black Pepper
- 1.5 cups Red Wine
- 3 cloves Garlic cloves
- 1 Onion
- 2 Carrots
- 1 cup Mushrooms
- 1.5 cups Beef Broth
- 1 tablespoon Tomato Paste
- 1 teaspoon Thyme
- 2 leaves Bay Leaf
- 2 tablespoons Butter
Instructions:
- Cut the beef into 1-inch cubes and season with the salt and pepper. Brown it in a large pot with the butter over medium-high heat. This should take about 5 minutes.
- Take the beef out of the pot and set it aside in a bowl. In the same pot, add garlic, chopped onion and carrots. Cook until the onions are softened.
- Add the tomato paste to the veggies and stir until everything is coated.
- Add the red wine to the pot, scraping the bottom to release any browned bits.
- Add in the beef again, with mushrooms, beef broth, thyme, and bay leaves.
- Bring the pot to a boil, then lower the heat and simmer for 30 minutes or until beef is tender.
- Taste and adjust seasoning if necessary. Remove the bay leaves before serving. It's delicious served with mashed potatoes or crusty bread.
