Quick Chinese Scrambled Eggs with Tomatoes

Ingredients:

  • 4 whole eggs
  • 2 large tomatoes
  • 2 stalks green onions
  • 2 tablespoons vegetable oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 pinch salt

Instructions:

  1. 1. Beat the eggs in a bowl until well blended.
  2. 2. Cut the tomatoes into wedges and chop the green onions.
  3. 3. Heat the oil in a wok or frying pan over medium heat.
  4. 4. Add the beaten eggs and scramble until nearly cooked through. Remove and set aside.
  5. 5. In the same pan, add the tomatoes, sugar, and salt. Cook until the tomatoes are soft and start to release their juices.
  6. 6. Return the scrambled eggs to the pan with the tomatoes. Add soy sauce and green onions.
  7. 7. Stir fry everything together for another 2 minutes until well combined.
  8. 8. Serve immediately with some steamed rice if desired.
