
Quick Chinese Scrambled Eggs with Tomatoes

Ingredients:
- 4 whole eggs
- 2 large tomatoes
- 2 stalks green onions
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 pinch salt
Instructions:
- 1. Beat the eggs in a bowl until well blended.
- 2. Cut the tomatoes into wedges and chop the green onions.
- 3. Heat the oil in a wok or frying pan over medium heat.
- 4. Add the beaten eggs and scramble until nearly cooked through. Remove and set aside.
- 5. In the same pan, add the tomatoes, sugar, and salt. Cook until the tomatoes are soft and start to release their juices.
- 6. Return the scrambled eggs to the pan with the tomatoes. Add soy sauce and green onions.
- 7. Stir fry everything together for another 2 minutes until well combined.
- 8. Serve immediately with some steamed rice if desired.
