Quick Chinese Pork Breakfast Stir-Fry

Ingredients:

  • 0.5 lb Pork loin
  • 2 whole cloves Garlic cloves
  • 1 Tablespoon Ginger
  • 1 whole Green bell pepper
  • 1 whole Red bell pepper
  • 2 Tablespoon Soy sauce
  • 2 Large eggs Eggs
  • to taste Salt and pepper

Instructions:

  1. Slice pork loin into thin strips.
  2. Mince the garlic and ginger.
  3. Deseed and chop the bell peppers into bite-sized pieces.
  4. Heat a pan over medium heat, add a splash of oil.
  5. Add the pork, ginger, and garlic to the pan and stir-fry until the pork is no longer pink.
  6. Add the bell peppers and stir-fry for another 2-3 minutes.
  7. Push the ingredients to one side of the pan, crack the eggs on the other side.
  8. Scramble the eggs until just set, then mix with the rest of the ingredients.
  9. Season with soy sauce, salt and pepper. Stir-fry for another minute.
  10. Serve immediately with toast or streamed rice.
