
Quick Chinese Pork Breakfast Stir-Fry

Ingredients:
- 0.5 lb Pork loin
- 2 whole cloves Garlic cloves
- 1 Tablespoon Ginger
- 1 whole Green bell pepper
- 1 whole Red bell pepper
- 2 Tablespoon Soy sauce
- 2 Large eggs Eggs
- to taste Salt and pepper
Instructions:
- Slice pork loin into thin strips.
- Mince the garlic and ginger.
- Deseed and chop the bell peppers into bite-sized pieces.
- Heat a pan over medium heat, add a splash of oil.
- Add the pork, ginger, and garlic to the pan and stir-fry until the pork is no longer pink.
- Add the bell peppers and stir-fry for another 2-3 minutes.
- Push the ingredients to one side of the pan, crack the eggs on the other side.
- Scramble the eggs until just set, then mix with the rest of the ingredients.
- Season with soy sauce, salt and pepper. Stir-fry for another minute.
- Serve immediately with toast or streamed rice.
